Baked Sweet Potatoes

Serves 2 for main course or 4 for side-dish
2 medium-size sweet potatoes, cut in half lengthwise - keep the skins on
4 slices of short cut bacon, finely chopped
1/4 cup feta cheese, crumbled
olive oil
parsley or rosemary

1. Preheat oven to 180 degrees celsius.
2. Line a baking tray with baking paper. Baste sweet potato with olive oil.
3. Sprinkle bacon and feta over the top of the sweet potatoe halves and drizzle with olive oil.
4. Bake for 40 minutes or until tender when tested.
5. Just before serving, sprinkle with parsley or rosemary and season with salt and pepper.
