Orange and Spices Biscuits


Makes about 20

150g butter, softened
3/4 cup raw caster sugar
3 tsp finely grated orange rind
1 egg
1 3/4 cup plain flour
1/4 tsp cardamon
1/4 tsp cinnamon
2 Tbs orange juice
1/2 cup icing sugar


1. Line 2 large baking trays with baking paper.
2. Beat butter, sugar and orange rind in a large bowl until pale and creamy
3. Add egg.
4. Stir in flour, baking powder, spices and juice.
5. Roll into a ball and wrap in Gladwrap and refrigerate for 30 mins
6. Preheat oven to 180°C
7. Roll 1 Tbs portions of dough into balls, roll in icing sugar and place on lined trays. Flatten a little.
8. Bake, swapping trays halfway through cooking, for 15 minutes or until the biscuits are lightly golden. Cool on trays
9. Dust with icing sugar before serving.
